Tomato Confit on Toasted Sourdough Bread

Ingredients:

  • Cherry Tomatoes

  • Rosemary

  • Thyme

  • Garlic

  • Pepper

  • Salt

  • Olive oil

  • Greek Yogurt

Recipe:

  • Preheat oven at 165c

  • Add all ingredients (except yogurt) in a baking dish.

  • Bake for 40 minutes to an hour.

  • In the meantime toast your slices of Sourdough bread.

  • Drop some Greek Yogurt on the toast, and then top with your tomato confit. Make sure to get some of that herby olive oil on there as well

  • You can also drizzle some balsamic if you like.
