Peanut Butter & Dark Chocolate Oat Bars

Ingredients:

  • Base:
    • 1/4 cup melted coconut oil
    • 1/4 cup maple syrup
    • 2 large eggs
    • 1 1/2 cups almond flour
    • 1 cup rolled oats ( quaker_cyprus )
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon kosher salt

  • Topping
    • 1 cup peanut butter
    • 225 gr melted dark chocolate
    • 1 tsp coconut oil
    • Flaky salt, for garnish

Recipe:

  • Preheat the oven to 175C

  • Line a 9-inch square baking pan with parchment.

  • In a medium bowl, whisk together the coconut oil, maple syrup, and eggs.

  • Add the almond flour, oats, baking soda, cinnamon, and salt and stir together.

  • Spread in a pan and bake for 15 to 18 minutes until golden, then let cool.

  • Spread the nut butter evenly over the cake.

  • Stir together the dark chocolate and coconut oil and then pour over the peanut butter.

  • Garnish with flaky sea salt, then chill for 2 hours.

  • Cut into bars and serve.
