Oat Granola & Nuts Cookies

Ingredients:

  • For the baked oats:
    •2 ½ cups brown sugar
    •1 cup unsalted butter, room temperature
    •2 tsp. Vanilla extract
    •2 eggs, room temperature
    •1 ½ cups all-purpose flour
    •1 tsp. Salt
    •½ tsp. Baking soda
    •1 cup Quaker Oats
    •2 cups Quaker Crunchy Bites with Oats & Nuts

Recipe:

  • 𝐒𝐭𝐞𝐩𝐬:
    •Preheat the oven at 180C

  • Mix butter and 2 cups brown sugar in the mixer bowl on medium speed until light in color for about 5 min.

  • While butter and sugar are creaming, combine flour, salt and baking soda in mixing bowl and whisk to combine.

  • Add 1 cup of Granola to a food processor with the remaining ½ cup of brown sugar and pulse until granola breaks up.

  • Combine with remaining granola and oats and mix to combine.

  • Turn the mixer to low, and add vanilla, followed by one egg at a time.

  • Remove bowl from mixer and add the dry ingredients.

  • Fold in granola and oats mixture until combined.

  • Chill in the refrigerator for at least 30 minutes before.

  • Use a cookie scoop to place on a baking sheet, 5cm apart.

  • Bake for 10-12 minutes, or until edges are crispy and center is soft
