Roasted Veggie Salad with Tahinosalata

Ingredients:

  • Tahinosalata

  • Zucchini

  • Sweet Potato

  • Red Cabbage

  • Chickpeas

  • Avocado

  • Radish

  • Mixed Greens

  • Avocado

  • Lemon Juice

  • Quinoa

Recipe:

  • Cook your quinoa

  • Chop your zucchini, sweet potato and red cabbage and put them in a tray along with some canned chickpeas . Give some extra love and drizzle with coconut oil, salt and some curry powder. BAKE at 190c for 20 minutes.

  • Fill a big bowl with your choice of salad ( I used mixed greens) and top with zucchini, sweet potato, red cabbage, chickpeas, avocado, radish and quinoa.

  • Drizzle your Tahinosalata, then squeeze some lemon and you’ve got yourself a delicious meal!
