Chicken Parm Sandwich

Ingredients:
2 cups of bread crumbs
1/4 cups freshly grated parmesan
2 large eggs
2 cups all-purpose flour
Chicken cutlets, cut in half
Salt & Pepper
Garlic powder
Fresh mozzarella sliced
4 hero rolls or baguettes, cut in half
Ketchup
Olive oil
Oregano
Fresh basil leaves (garnish)
Recipe:
Preheat oven to 190C.
Grab 2 bowls: one with grated parmesan, bread crumbs, garlic powder, oregano, salt and pepper, and in a small bowl whisk the eggs.
Dip each chicken fillet into the egg mixture then into the bread crumb mixture, coating both sides well. Transfer to the prepared baking sheet.
Add the chicken in the oven and bake for 30-40 minutes until it’s cooked.
Meanwhile, In a small bowl mix together ketchup, olive oil, a little bit of water, oregano and basil.
Grab your hero rolls or baguettes, spread some butter and toast for a minute or two.
Add some sauce on the bottom, place chicken and top with fresh sliced mozzarella.
Toast again until mozzarella begins to melt.
Add spoonfuls of sauce and some fresh basil leaves between the chicken and hero rolls.
Close sandwich, cut in half and and enjoy!👌🏼
