Chicken Parm Sandwich

Ingredients:

  • 2 cups of bread crumbs

  • 1/4 cups freshly grated parmesan

  • 2 large eggs

  • 2 cups all-purpose flour

  • Chicken cutlets, cut in half

  • Salt & Pepper

  • Garlic powder

  • Fresh mozzarella sliced

  • 4 hero rolls or baguettes, cut in half

  • Ketchup

  • Olive oil

  • Oregano

  • Fresh basil leaves (garnish)

Recipe:

  • Preheat oven to 190C.

  • Grab 2 bowls: one with grated parmesan, bread crumbs, garlic powder, oregano, salt and pepper, and in a small bowl whisk the eggs.

  • Dip each chicken fillet into the egg mixture then into the bread crumb mixture, coating both sides well. Transfer to the prepared baking sheet.

  • Add the chicken in the oven and bake for 30-40 minutes until it’s cooked.

  • Meanwhile, In a small bowl mix together ketchup, olive oil, a little bit of water, oregano and basil.

  • Grab your hero rolls or baguettes, spread some butter and toast for a minute or two.

  • Add some sauce on the bottom, place chicken and top with fresh sliced mozzarella.

  • Toast again until mozzarella begins to melt.

  • Add spoonfuls of sauce and some fresh basil leaves between the chicken and hero rolls.

  • Close sandwich, cut in half and and enjoy!👌🏼
