Zucchini Fritters with Oat Flour and Rice Cakes

Ingredients:

  • 2 x zucchini

  • 3 x rice cakes (sour cream & chives flavour) by @snackajacks_cy

  • 1 x egg

  • 10 x mint leaves

  • 1/2 tsp. baking soda

  • 1/2 tsp baking powder

  • 50 gr oat flour

  • 50 ml water

  • Pinch of salt & pepper

  • Pinch of pepper

  • 200 ml frying oil

  • Avocado for side

Recipe:

  • Grate the zucchini on a coarse grater and place on a towel to absorb the liquid.

  • In a bowl, add all the remaining ingredients along with the Snack a Jacks® rice cakes (crushed) and mix with a whisk to make a batter.

  • Add the grated zucchini to the batter and mix.

  • Heat the pan and using a spoon, to drop your fritters in the pan one by one , at a distance from each other. Fry for 1 minute and as soon as the pancakes are browned, turn them over for another 1 minute.

  • Remove from pan and put them on kitchen paper to dry and serve immediately.

  • Serve with yogurt dip (optional).
